Situation

Mereval Coffee roasts its own beans and sells them in three cafés and online. Sales grew every year and cash did not. Nobody knew which drinks, beans or sites made money, and prices had not moved in two years.

Work

Linnea built a cost model for every drink and every bag, down to milk, paper and labour minutes. She split the product list into three price tiers and wrote the plan for a gentle price rise. The roaster team learned to read the model themselves.

Result

Gross margin rose by 4.8 points inside a quarter, with no customers lost. Wasted green coffee fell, and the owner now reviews a one-page margin report every month.

The numbers

  • +4.8 pts Gross margin
  • 10 weeks Project length
  • €310K Yearly margin gain

She priced our coffee like a business, not like a hobby. We kept every customer and the margin went up.
